The process of distillation is used to turn wine into brandy, a drink with a higher concentration of alcohol (about 3x that of wine). The distillation process also creates different aromatic and taste properties in brandy than in wine, rather than simply having a higher alcohol content.

Distillation works by heating up and vaporizing liquids from each other that have different boiling points. As alcohol has a lower boiling point than water, alcohol will boil first, and can be collected and produce a final beverage that has a higher concentration of alcohol.

Brandy is used to produce port, sherry, vermouth and other popular "fortified" wines. A fortified wine is a wine that has been mixed with a distilled beverage.
