While the sweetness of a wine is controllable through the winemaking process, mourvedre grapes typically produce dry red and rose wines. Mourvèdre is a popular grape in Rhone blends, and specifically the Châteauneuf-du-Pape region. The grape is also known as Monastrell in Spain, where it is the second most planted grape, next to Grenache.

Mourvedre wines are typically very intense with relatively high acid, tannins, and alcohol. The flavors are described as dark red fruits, earth, meaty, game, and leather.
