I haven't cooked with Sherry a lot, but Sherry's range in tastes and from dry to sweet. Certain recipes will call for dry Sherry's and certain for sweeter. In general, stay away from "Cooking Sherry" and get the real stuff from Spain - Fino, Manzanilla, or Amontillado from the Jerez region of Spain.
